Harvesting vegetables and making spicy zucchini & broccoli salad. Try this salad and you will never regret it. My children and spouse loved it. Spicy Zucchini & Broccoli Salad…takes a few minutes to whip up and it’s very easy on the pocketbook.

Zucchini/Courgette

Broccoli (harvest these just before they start to flower, although the flowers are edible)

Carrot

Scotch bonnet peppers

Tomatoes

Ingredients you will need to make these garden harvest into salad:

Black pepper

Pink Himalayan salt

Extra virgin olive oil

Lemon

Instructions:

First wash the garden harvest, slice the zucchini/courgette (I used a Saladmaster Food Processor to achieve very consistent slices but you’re more than welcome to use a chef’s knife but it might not be as precise)

Add to the mixing bowl, blanched broccoli, grated carrot, tomatoes cut in halves and chopped scotch bonnet peppers (depending on how spicy you like it). Then dress the salad with crushed black pepper, crushed pink Himalayan salt, olive oil and lemon juice. Mix well and it’s ready to serve. Enjoy on it’s on or as a delicious side.
