Never knew sweet plantain & papaya seeds in Mackerel sauce tasted so delicious. Sweet plantains simmered in Mackerel sauce with a miracle ingredient. The miracle ingredient is papaya seeds.
Papaya seeds have been proven to be used for eliminating intestinal worms but its hard to consume as it is, so use them in this recipe in place of black pepper as papaya seeds also have peppery taste.
Ingredients:
Papaya/Pawpaw seeds
Seasoning cubes
Salt
Plantain
Chopped tomatoes
Scotch bonnet peppers
Chopped garlic
Broccoli
Smoked mackerel
1 calorie spray
Instruction:
Remove the seeds for a ripe papaya, put the seeds in a strainer, pour water and shake it for a few seconds. Remove the seeds and set aside one tablespoon of cleaned seeds. Sun dried the leftover papaya seeds and store for future use. In a heated pan, spray cooking oil and add the tsp of papaya seeds, after roasting for a minute add onions, scotch bonnet peppers, garlic and chopped tomatoes. Stir and season to taste. Add smoked mackerel, stir and allow to cook for 2-3 minutes Fry plantain. Add cleaned broccoli, nestle fried plantain into the cooked sauce and allow to cook some more. Stir well and its ready.
