Easy and healthy one skillet chicken and rice


– Rice Chicken thighs

– Garlic granules

– Ground ginger

– Seasoning cubes

– Salt

– Dried thyme

– Curry powder

– Scotch bonnet pepper

– Chopped onions

– Tomato paste

– Knorr chicken stock pot

– Chopped mixed bell peppers

– Ground black pepper

– Jollof seasoning

– Paprika

– Italian seasoning

– Chicken seasoning


Place cleaned chicken thighs into a ziplock bag, season and massage well so that the spices can coat the chicken thighs. Set aside. Set timer to 230 degrees to heat up a clean Saladmaster Electric Core Skillet. In the preheated Saladmaster Electric Core Skillet, place chicken thighs with no oil for 10 minutes. After 10 minutes flip to fry the other side. With Saladmaster Core Skillet you can fry with no oil. Remove chicken thighs, toss onions, peppers, tomato paste, knorr chicken stock pot and season with salt, thyme and curry. Add seasoning cubes, paprika, Jollof seasoning, black pepper and stir. Add washed rice, stir and add water to the level of the rice. Taste and adjust seasoning then set Skillet to ric 2, cover and allow to cook. Once cooked, stir, nestle the cooked chicken thighs into the rice and allow to cook for 9 minutes.
